Suran (pronounced sue-ran) is a large tuber also known as Elephant yam. Botanically, the plant is classified as Amorphophallus paeoniifolius and is unrelated to the common yam, which is classified as Dioscorea. It is known in England as the Elephant Foot yam for its somewhat elephantine hoof-like appearance. Yams are not only an excellent source of fiber but also high in potassium and manganese, which are important for supporting bone health, growth, metabolism, and heart function ( 3 , 4 ). These tubers also provide decent amounts of other micronutrients, such as copper and vitamin C.
